The vast majority of Irish Whiskey is distilled three times compared to the standard double-distillation method that the majority of Scottish distilleries employ.
In addition to this, traditionally Irish Whiskey is completely unpeated, therefore it tends to be smooth and sweet. It cannot really be compared in style to whiskies hailing from the Scottish regions of Islay, Campbeltown and the Islands however it is generally quite similar to Highland, Lowland and Speyside whiskies.
The Irish whisky industry has been enjoying a boom period from 1990 through to the present day with the resulting expansion of the existing distilleries and the establishment of a few new distilleries on the island in recent years taking their total to seven.
