Daftmill Distillery is situated near Cupar in Fife, making it one of just seventeen Lowland distilleries currently releasing whisky, with 6 more under construction or active but not yet releasing. However, Daftmill was the pioneer - commissioned in 2004, though only began production in earnest in 2005, it marked start of the new wave of distilleries. At that time it was the first malt whisky distillery in Fife since Auchertool closed its doors in 1927.
The business is owned by Francis and Ian Cuthbert whose family has farmed the land since the 1980s.
This is the Winter 2011 vintage. For this release, 27 bourbon barrels were filled in December 2011, matured in the upper level of their dunnage warehouse, and bottled in 2024.
Nose: The signature Daftmill Distillery character is immediately present, showcasing green fruits, layered with herbal nuances, toasted almonds, and a hint of sandalwood. As it opens up, comforting aromas of freshly baked croissants and marzipan unfold from the glass. A splash of water reveals fennel, cumin, and creamy butterscotch sweets.
Palate: A well-balanced contrast of sweet and dry elements. The profile is initially led by sweet fruits and traditional Scottish tablet, transitioning gracefully into drier fruit tea and gentle herbal undertones.
Finish: Medium in length, once again showcasing a refined balance and complexity, leaving a final, elegant floral impression.
An effortlessly sippable dram with a great depth of character.
