Nose : Rich, fruity aromas of stewed plums and rhubarb combine with dark chocolate, raisins, cardamom and cinnamon, alongside a touch of old leather.
Taste : Soft and velvety mouthfeel, beginning with juicy plums, nectarines and melted almond butter, before umami notes of cinnamon, clove and brandy snaps emergeFinish : Rich dark chocolate pudding – with a touch of chili, cardamom and aniseed.

JAMES EADIE’S WHISKY LEDGERS.
These leather-bound volumes revealed the contents of Mr. Eadie’s Victorian warehouses – and his fondness for maturing whisky in ex-fortified wine casks.
For the last six years, we have experimented with different combinations of single malts and wood types, seeking the right balance between wood and spirit. These very limited and sought-after whiskies are released twice a year under our ‘Cask Finish’ range.
Our aim has always been to develop a permanent range from this project, delivering the same high quality of our ‘Cask Finish’ products on an ongoing basis.
After years of careful study, we were struck by two whiskies in particular.
The first impressed us with the harmony achieved between the full-bodied, waxy spirit of one particular Highland single malt and the sweet, summery flavours imparted by Malaga casks.
The second was a favourite we returned to often, in which the bold, fruity spirit of one particular Speyside single malt, enhanced by the rich, spicy notes imparted by Oloroso Sherry casks. After over 11 months of maturation in Malaga and Oloroso Sherry casks respectively, we found that 48.3% was the perfect drinking strength, combining the accessibility of the lower alcohol while retaining enough flavour from the wood finish.
The labels include an original James Eadie design from the early 20th century, alongside images of landmarks from each region in the style of that era by designer Cristina Buonanno.
We now present our new Speyside and Highland whiskies.
